Although the rest of my family doesn’t feel the same, I could eat soup every single night in the Fall and Winter months and be perfectly happy. I usually fix one on Sunday or Monday and eat on it pretty much by myself for the rest of the week. (Fine by me.) Today, I’m sharing my favorite Fall soup recipe. It was passed to me from my best friend, Katie, who got it from her grandmother Ree.
This is super easy and pretty fast. You could totally use chicken breasts, but I always opt for a rotisserie chicken to make it even quicker. Also, if it looks more “red” than “white” in the photo, it’s because I put a ton of salsa in mine. :)
PS–I never make this soup without thinking of Katie. She served this the first time she met her future husband’s parents and also laid a Beano out beside each place setting. (I guess you can never be too careful.) Love that girl.
